Kirsch is the oldest fruit brandy. We use guignes (black cherries with large cores) that come from Alsace and Franche-Comté.
Picked and then stems removed, the fruits, whose quality has been verified, are placed in glass vats or wooden barrels and brewed daily for 4 to 5 weeks. Thus, the kernels transmit to the pulp the slight almond taste characteristic of the product. 18 Kg of cherries are needed to obtain one liter of spirit.
