The grapes are slowly pressed, in entire bunch, grape variety by grape variety. The final assemblage will be choosing after the fermentation.

It is a sparkling wine which has completed its fermentation in the bottle.
Unlike the traditional method, it is not a 2nd fermentation in the bottle to obtain effervescence. The Pet’ Nat’ starts its alcoholic fermentation in vats, then we bottle it so that it finishes directly in the bottle. There is also no bleeding, resulting in a slight veil and it is directly marketed with its metal capsule.
